This chapter discusses the use of ultrasound in drying processes. It describes the use of computational design of the power ultrasonic system. It presents a numerical study by FEM of the constituent elements. The chapter describes the development of a power ultrasonic transducer prototype and the application of an ultrasonically assisted convective drier. A computational analysis of ultrasonically assisted convective drying is presented. Future trends and applications of this process in food technology are emphasized.
