Power ultrasound is an innovative technology being applied to improve mass transfer kinetics during convective drying process of natural products. The different effects produced by the application of high-intensity ultrasonic waves may affect the drying rate without causing a significant increase in the temperature of the product. Due to the fact that the effect of power ultrasound depends of the product, the aim of this paper is to present several examples that show the influence of the acoustic energy applied to the convective drying of carrot, orange peel and lemon peel.
